Because it is a coffee house and not a bar, the room listens instead of talking over you. That single fact changes everything: quiet instruments work, dynamics are audible, and the distance between you and the nearest table is essentially nothing. Gaby Aparicio hosts, keeps the order honest, and does not let the list get gamed by whoever showed up loudest.

Half the crowd is performers waiting their turn. The other half came because the format produces surprises — some Tuesday, somebody nobody knows gets up and does something remarkable.
