Everyone shows up believing they already know what a good wing is. Then somebody hands you one off a table run by a person who quit a real job to chase this, and the argument you have been having with your friends for years finally has stakes.
That is the engine of the whole thing. Professional chefs, neighborhood restaurants, and independent sauce makers all enter the same ring, and the crowd votes. Not a panel of judges. You. The vendors who show up for their first year here often come back with a storefront, and watching for that is what the regulars actually do.
It sprawls out across Broadway Pier on the waterfront — DJs, lawn games, beer and spirits pours, and a few hundred strangers striking up conversations about whatever is currently in their hand. Trolley to the Convention Center stop and walk north. Dress for the bay breeze.
Bring the friend who insists their homemade sauce is better than anything sold. Let them find out.
